Cupcake Monday - Birthday Cake Oreo Cupcakes


I finally got around to making some new cupcakes this weekend.
Have y'all seen these.....
 
OH.MY.WORD. 
Delicious!
It makes me sad that they are only available for a limited time, because they are yummy!
So, I thought, let's try these in a cupcake.
I got my inspiration from Gingerbread Bagels, 
but I wanted to make it a little simpler.
I took my Super Moist White Cupcakes, folded in 7 crushed Birthday Cake Oreos, and baked for about 18 minutes.  Then I took my basic buttercream, put a small amount in a bowl and added about 3-4 very finely crushed Birthday Cake Oreos, mixed it up really well, and using my cupcake corer I made little holes in the center of my cupcakes that I then filled with the oreo frosting.  Then I just colored the rest of my frosting pink, per Jillian's request, frosted my cupcakes, and then she topped them with lots of sprinkles.  She was my BIG helper!

These got rave reviews at church tonight!
